Jordan's Chocolate Cake in a Mug

My favorite son-in-law, Jordan, and granddaughter, Suzi, at the Cabbage Patch last September.



On Mother's Day afternoon Jenny and I were wishing for chocolate. Jordan made this for us. It was just what we needed.

Chocolate Cake in a Mug
(this takes 5 minutes to make)
In a small bowl …..
(it can actually be made in the mug, but it's difficult to stir)


Mix: ¼ cup sugar
¼ cup plain flour
2 tablespoons cocoa

Add: 1 egg
3 tablespoons oil
3 tablespoons milk
1 splash vanilla flavoring
Chocolate chips or broken bits of candy bar (optional)

Spray a large mug with oil spray and pour in mixture.
Microwave for 2 ½ minutes in a 1100 watt microwave
(3 minutes in a 1000 watt microwave . . . or adjust to yours).



Don't panic when it rises over the edge of the mug, it will be fine.
Let cake sit in mug for a few minutes before serving.
Serve warm with ice cream on top. Drizzle on chocolate syrup, if you like.



This recipe makes two very generous servings or four small servings.
